We created a delicious Mediterranean salad recipe that is perfect for lunch or a dinner side dish.
Mediterranean Salad Recipe:
Ingredients:
1 large cucumber, chopped
1 large tomato, chopped
1/2 red onion, chopped
1/2 cup kalamata olives, pitted
1/2 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
2 tablespoons red wine vinegar
4 tablespoons extra-virgin olive oil
Salt and pepper to taste
Instructions:
In a large bowl, combine the chopped cucumber, tomato, red onion, kalamata olives, feta cheese, parsley, and mint.
In a separate small bowl, whisk together the red wine vinegar, extra-virgin olive oil, salt, and pepper.
Pour the dressing over the salad ingredients and gently toss to combine.
Serve immediately or chill in the refrigerator for a few hours for the flavors to develop.
