MATCHA PANCAKES

Matcha powder is a rich source of antioxidants, which help to protect your cells from damage caused by free radicals. It is also known to boost metabolism and improve brain function. Additionally, these pancakes are vegan and made with whole food ingredients, making them a healthy and satisfying breakfast option for the weekend.

We created a recipe for healthy vegan matcha pancakes that are perfect for weekends:

Ingredients:

  • 1 cup all-purpose flour

  • 2 tablespoons matcha powder

  • 2 tablespoons baking powder

  • 1/4 teaspoon salt

  • 1 tablespoon coconut sugar (or sweetener of your choice)

  • 1 cup unsweetened almond milk (or any plant-based milk of your choice)

  • 1 tablespoon apple cider vinegar

  • 1/2 teaspoon vanilla extract

  • 1 tablespoon coconut oil (or any oil of your choice)

Instructions:

  1. In a medium bowl, whisk together the flour, matcha powder, baking powder, salt, and coconut sugar.

  2. In a separate bowl, whisk together the almond milk, apple cider vinegar, and vanilla extract.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix, as this can result in tough pancakes.

  4. Heat a nonstick pan or griddle over medium-high heat. Add the coconut oil and swirl it around to coat the pan.

  5. Use a 1/4 cup measuring cup to scoop the batter onto the hot pan. Cook for 2-3 minutes, or until bubbles appear on the surface of the pancake and the edges start to look set.

  6. Flip the pancake and cook for an additional 1-2 minutes, or until the pancake is cooked through.

  7. Repeat with the remaining batter.

  8. Serve the pancakes with your favorite toppings, such as fresh fruit, maple syrup, or vegan whipped cream.
